There are hundreds of thousands of cars out there ready to be converted. The best cars to convert to electric are small, older cars. The older the car, the fewer electronic components it will have and the easier the conversion will be.
As batteries are still the most important item in a conversion project, in terms of weight and cost, the only way to minimise this is to install as few batteries as possible, and this is achieved today by converting a car that needs little power to run, therefore it will need fewer batteries.
Another advantage of this philosophy is the financial cost of the project. An older car will always cost less, than the same equivalent two years old. The Mini is the exception that proves the rule, but hey, it's a Mini.

It's a great idea to convert old motor vehicles to electric, and without the need to spend astronomical sums of money. Then the big car companies will come along and say it's not possible.
